The preparation begins several weeks before its harvest. First the tea plants are covered to hide them from the sun. This delays their growth and creates a darker green color in the leaves. With this process the tea gets amino acids creating a sweeter tea. After harvest, the leaves are placed on a flat surface to dry. The stem and veins are removed before grinding them to a fine, deep green powdery texture known as "matcha".
